With a terroir of exceptional wealth, a rich century-old expertise and traditional  methods, the House Desruets have strived since the nineteenth century to produce the best champagnes.

Tasting notes

The Cuvée « Cœur de Pinots », harvest 2014, mainly produced by the blending of 90% of Pinot Noir and 10% of Pinot Meunier. Mainly from our plots « Le Noyer de l’Orme du Midi » and « Les Basses Montecuelles » planted respectively in 1974 and 1980. This champagne is elaborated from « cœur de Cuvée ». The Pinot Noir, round and powerful, associated at the lightness of Pinot Meunier give a perfect wine with structure. The labelling of this champagne is a wink to François Desruets, 5th generation of the house : it takes back the graphic codes initiated by this last one during the 80’s.

Appearance

Its characteristc : amber pink hue that we also say « oeil-de-perdrix ». It is animated by fine and light bubbles.

On the nose

It is powerful and there are exuberant notes of fruits and stones. Generous, it is agremented with discreet spikes of siliceous rock as quartz, chalcedony and opal.

On the palate

In mouth, flavours are rich and very fruity with notes of red fruits and candied fruits going from the blood orange through the salted caramel. It finished with mineral notes, long and persistant.

Pairing

This Cuvée is perfectly suited to red meats and the plates cooked with sauce. It will surprise you with chocolate : melting, fôret noire…
